Burung Layang Terbang Mie Keriting Telur memiliki ukuran mie yang kecil, seperti umumnya di Hong Kong.
Memiliki tekstur yang garing serta didalamnya menggunakan telur yang lebih banyak. Dan Mie Hong Kong dari Burung Layang Terbang ini tanpa pewarna.

Cara memasak:

1. Didihkan air dengan jumlah yang cukup banyak, cukup untukmie bisa tenggelam.
2. Siapkan mangkuk yang telah diberi minyak goreng, kecap asin dan bumbu-bumbu
3. Setelah air mendidih, masukkan mie, aduk dan tunggu hingga mie mengapung ke atas, segera angkat setelah mie mengapung.
4. Angkat dan tiriskan, masukkan ke dalam mangkuk yang telah diberi minyak dan bumbu lalu aduk rata, tambahkan daging ayam, dll.
5. Mie siap untuk dinikmati.
   Tips: Untuk memberikan tekstur yang lebih kenyal dan garing mie direbus sedikit lebih cepat. Atau setelah mie direbus, siram/rendam mie dengan air dingin.
